Soft Gingerbread Man Cookies Recipe
Sweet and perfectly spiced soft gingerbread man cookies. Add a little icing decoration and they will cheer up the holidays.
Ingredients
- 113 g (1/2 cup) unsalted butter softened
- 100 g (1/2 cup) brown sugar
- 170 g (1/2 cup) molasses
- 1 egg
- 300 g (2.5 cups) all-purpose flour
- 1/2 tsp salt
- 1/4 tsp baking soda
- 1 tsp ginger
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp all-spice
For the royal icing
- 1 cup Icing sugar
- water
Instructions
- In a medium, bowl cream together butter and brown sugar for 1-2 minutes until creamy and smooth.
- Add the molasses and egg, and mix to combine.
- Add flour, salt, baking soda, and spices. Mix until completely combined.
- Transfer the gingerbread cookie dough onto a piece of plastic wrap. Wrap it tightly and let it chill in the refrigerator for 1 - 2 hours.
- Preheat the oven to 170°C and line two baking sheets with parchment paper.
- Roll out the gingerbread cookie dough on a floured surface to about ¼" thickness. Cut into desired shapes with cookie cutters.
- Transfer the cookies to the baking sheets and bake for 10 minutes until they become golden around the edges.
- Cool completely and decorate with royal icing.
